These creamy croquettes are a delight for any occasion. The recipe, adapted for those with lactose and egg intolerance, results in croquettes that are soft on the inside and crispy on the outside. The minced meat, cooked in a tasty broth, gives it a special touch. I often prepare them for family gatherings or as a rich appetizer. The key is to let the dough cool well before forming the croquettes. A comforting and delicious dish that always triumphs! Perfect to enjoy at any time of the year, although they are especially appealing in autumn and winter. They can be accompanied with a fresh salad for a delicious contrast.

Ingredients (7 ingredients)

  • 200 gramos Flour
  • Minced meat
  • 1 litro Meat broth
  • 0.5 piece Onion
  • Ground pepper
  • Olive oil
  • Bread crumbs

Preparation (7 steps)

Chop the onion

Place half the onion in the Thermomix bowl and chop for 3 seconds at speed 5.

Sauté the onion and meat

Add olive oil to the bowl until it covers the blades. Add the chopped onion and minced meat. Program 8 minutes, temperature 120°C and speed 1.

Add the broth and pepper

Thermomix® Setting

Add ground pepper to taste and the meat broth to the bowl. Program 10 minutes, temperature 100°C and speed 1. Stir with the spatula from time to time.

Incorporate the flour

Add the flour little by little to the bowl, program 5 minutes, temperature 90°C and speed 4. Observe the consistency and add more flour if necessary.

Cool the béchamel

Pour the béchamel into a container and let it cool completely. This step is crucial to be able to form the croquettes.

Form the croquettes

With the béchamel cold, form the croquettes with a spoon. Pass each croquette through breadcrumbs, then through a mixture of water and flour (with the consistency of beaten egg) and finally, again through breadcrumbs.

Fry the croquettes

Heat abundant oil in a pan over medium heat. Fry the croquettes until golden brown on all sides. Place the fried croquettes on absorbent paper to remove excess oil.
