Description

These pot-au-feu flavored potato croquettes are a great way to reuse leftover meat. I often make them after a good family pot-au-feu. The mashed potatoes, mixed with minced meat and aromatics, are a delight. They are perfect for a comforting dinner or a gourmet brunch. The preparation is quite simple, although frying requires a little monitoring. They can be served with a green salad for a balanced meal. A true traditional dish revisited with a touch of modernity thanks to the Thermomix®!

Ingredients (9 ingredients)

  • 5 piece potatoes
  • 300 g cooked meat
  • 1 oignon onion
  • 1 oeuf egg
  • 50 g flour
  • 1 bunch parsley
  • 2 clove garlic
  • 1 pinch fine salt
  • 1 pinch pepper

Steaming the potatoes

Fill the Thermomix bowl with 500 ml of water. Place 5 peeled and chopped potatoes in the steam basket. Steam for 20 Min./Varoma/Stufe 1.

Preparing the puree

20 sec/Speed 4

Once cooked, empty the water from the bowl. Put the cooked potatoes back in the bowl and mash for 20 Sek./Stufe 4. Set aside the puree in a salad bowl and let cool.

Mincing the meat

Sort 300 g of cooked meat, remove fat and gelatinous pieces. Put the meat in the bowl and chop finely for 10 Sek./Stufe 6. Set aside the minced meat in the salad bowl with the puree.

Chopping the onion

3 sec/Speed 5

Peel and quarter 1 onion. Put the onion in the bowl and chop for 3 Sek./Stufe 5. Scrape the sides of the bowl with a spatula.

Cooking the onion

Add a little olive oil to the bowl with the chopped onion. Cook for 3 Min./120°C/Stufe 1.

Preparing the persillade

Add 2 cloves of garlic and a handful of fresh parsley to the bowl. Chop everything for 5 Sek./Stufe 7.

Mixing the ingredients

Pour the cooked onion and persillade into the salad bowl containing the puree and minced meat. Add 1 beaten egg, salt and pepper. Mix everything well by hand.

Forming the croquettes

Form small balls (about 5 cm in diameter) with your hand. Roll each ball in 50 g of flour.

Frying the croquettes

Heat oil in a pan. Fry the balls in the hot pan until golden brown. Serve hot.
