Description

These leftover croquettes are a delicious way to give a second life to the roasted meat that you have left over from a barbecue. I often prepare them after a family barbecue and they are always a success. The key is to infuse the milk with the bones of the meat to give a smoky flavour to the béchamel. Then, everything is mixed with the minced meat and left to rest in the fridge so that the dough has the perfect consistency. Ideal for an informal dinner or as an appetizer at a party!

Ingredients (9 ingredients)

  • 500 ml Milk
  • 2 tbsp Flour
  • Salt
  • Pepper
  • Leftover roasted meat (churrasco, flank, chicken)
  • 1 piece Egg
  • Breadcrumbs
  • 0.25 piece Butter
  • 2 tbsp Oil

Preparation (9 steps)

Infuse the milk

Heat 500 ml of milk in a saucepan with the bones of the roasted meat (churrasco). When it starts to boil, let it infuse for 5 minutes. Reserve the infused milk for the béchamel.

Chop the meat

Grind or cut the leftover roasted meat (churrasco, flank and chicken) very finely. Reserve.

Prepare the béchamel

Put 1/4 of butter and 2 tbsp of oil in the Thermomix bowl. Program 1 minute/120°C/Stufe 1.

Cook the flour

Thermomix® Setting
1 min/248°F/Speed 1 120

Add 2 tbsp of flour to the bowl and program 1 minute/120°C/Stufe 1 to cook the flour.

Add the infused milk

Thermomix® Setting
7 min/194°F/Speed 4 90

Incorporate the hot infused milk into the bowl. Program 7 minutes/90°C/Stufe 4. Stir with the spatula if necessary to prevent it from sticking.

Incorporate the meat

Thermomix® Setting
20 Seg./Speed 3/Linkslauf Reverse

Add the minced meat to the bowl and program 20 seconds/Stufe 3/Linkslauf to mix all the ingredients well.

Cool the dough

Pour the mixture into a container and let it cool completely. Cover and refrigerate for at least 12 hours (overnight) so that the dough is more consistent.

Form the croquettes

The next day, form balls with the dough. Pass each ball through beaten egg and then through breadcrumbs.

Fry the croquettes

Fry the croquettes in plenty of hot oil until golden brown. Drain on absorbent paper and serve hot.
