Description

This apple Calvados casserole is a wonderful dessert that is especially enjoyable in the colder months. The combination of juicy apples, a touch of Calvados, and a crispy topping makes it a real treat. I like to make it when friends come to visit because it's easy to prepare and simply tastes delicious. The apples are refined with vanilla and cinnamon, which gives the casserole a warm, wintery note. Served with a caramel that has been refined with crème fraîche, it is an absolute highlight. A recipe that you just have to love!

Ingredients (10 ingredients)

  • 0.5 piece Lemon juice
  • 75 g Thick cream
  • to taste Vanilla
  • to taste Calvados
  • to taste Cinnamon
  • 100 g Sugar
  • 100 g Flour
  • 150 g Butter
  • 200 g Brown sugar
  • 4 piece Granny apples

Preparation (9 steps)

Prepare apples

Peel, core and cut the apples into small cubes. Place the apple cubes in a bowl and drizzle with lemon juice to prevent browning.

Sauté apples

6 min/212°F/Gentle stir speed 100

Put 75 g butter in the mixing bowl and melt for 3 mins/50°C/speed 1. Add the apple cubes and sauté for 6 mins/100°C/gentle stir setting without reverse.

Flavoring

Thermomix® Setting
1 min/212°F/Gentle stir speed 100

Add Calvados, a pinch of vanilla and a pinch of cinnamon to the apples and simmer for 1 min/100°C/gentle stir setting without reverse.

Prepare crumble dough

Thermomix® Setting
20 sec/Speed 4

Put 100 g flour, 100 g sugar, a pinch of vanilla and a pinch of cinnamon in the mixing bowl and mix for 10 sec/speed 4. Add 75 g melted butter and process for 20 sec/speed 4 to make crumbles.

Layer casserole

Fill the apple mixture into four small casserole dishes or dessert rings and press down lightly. Sprinkle the crumbles over it.

Baking

Bake the casserole dishes in the preheated oven at 220°C for 20 minutes until the crumbles are golden brown.

Prepare caramel

5 min/Varoma/Speed 1 Varoma

While the casserole is baking, put 200 g cane sugar in the mixing bowl and caramelize for 5 mins/Varoma/speed 1 without a measuring cup.

Refine caramel

Thermomix® Setting
30 sec/194°F/Speed 2 90

Add 75 g crème fraîche to the caramel and stir for 30 sec/90°C/speed 2 until a smooth sauce is formed.

To serve

Serve the warm apple Calvados casserole with the caramel.
