Description

Crispy oven potatoes with herb-paprika dip are a vegetarian and gluten-free dish, ideal as a side dish, finger food or light main course. The main ingredients are waxy potatoes, paprika powder, garlic powder, olive oil and crème fraîche. With the Thermomix® the preparation of the dip is particularly easy. The preparation time is about 65 minutes for 4 portions and is well suited for parties, summer or as a hearty family meal.

Ingredients (14 ingredients)

  • 1000 g waxy potatoes
  • 2 EL sweet paprika powder
  • 1 EL garlic powder
  • 3 EL olive oil
  • 2 TL Salt
  • 2 EL rice flour
  • 150 g Crème fraîche
  • 150 g Mayonnaise
  • 1 Bund Parsley
  • 1 Bund Coriander
  • 1 Stück green bell pepper
  • 0.5 TL Chili powder
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (6 steps)

Prepare potatoes

Wash 1 kg waxy potatoes, pat dry and cut into bite-sized pieces. Place the potato pieces in a bowl.

Season potatoes

Add 2 tbsp sweet paprika powder, 1 tbsp garlic powder, 3 tbsp olive oil, 2 tsp salt and 2 tbsp rice flour to the potatoes in the bowl and mix well until the potatoes are evenly coated with the spices.

Prepare dip - chop herbs

Put 1 bunch of parsley and 1 bunch of coriander in the mixing bowl and chop for 5 sec./speed 7. Scrape down the sides with the spatula.

15 sec/Speed 4

Add 150 g crème fraîche, 150 g mayonnaise, 1 green bell pepper, cut into pieces, 1/2 tsp chili powder, salt and pepper to the chopped herbs in the mixing bowl and mix for 15 sec./speed 4. Season to taste and add more seasoning if necessary.

Bake potatoes

Place the seasoned potatoes on a baking tray lined with baking paper. Bake in a preheated oven at 200°C top/bottom heat for 30-40 minutes until golden brown and crispy. Turn halfway through and briefly open the oven door to allow the moisture to escape.

Serve

Serve the crispy oven potatoes together with the herb-paprika dip.
