Description

These white chocolate little rose cupcakes are a real delight for the eyes and the palate! Prepared with a soft sponge cake and a delicate cream, they are perfect for celebrating a birthday or for a special brunch. The almond flour in the sponge cake dough gives an extra note of flavor, while the white chocolate in the cream adds sweetness and creaminess. Decorated with sugar little roses, these cupcakes are a small masterpiece of pastry. I love them and I hope you like them too! The preparation takes a little time, but the result is guaranteed.

Ingredients (10 ingredients)

  • 3 piece eggs
  • 160 g sugar
  • vanilla extract
  • 160 g butter
  • 200 g flour
  • 100 g almond flour
  • 16 g baking powder
  • 200 ml fresh cream
  • 250 g chopped white chocolate
  • sugar little roses

Preparation of the sponge cake

Thermomix® Setting
3 min/99°F/Speed 4, 20 sec/Speed 4 37

In the Thermomix bowl, insert the eggs and sugar. Mix for 3 Min./37°C/Stufe 4. Add the vanilla extract, melted butter, flour, almond flour and baking powder. Knead for 20 Sek./Stufe 4.

Baking the sponge cake

Pour the dough into a low, wide baking pan (about 35x35 cm) lined with baking paper. Level the surface well and bake in a static oven preheated to 180°C for 10-15 minutes. (This step is not performed in the Thermomix).

Cooling and preparation of the hearts

Once ready, take the sponge cake out of the oven and let it cool completely. Draw hearts of different sizes on a sheet of paper and cut them out. Place the hearts on the sponge cake base and cut with a sharp knife or a wheel. Crumble the remaining pieces of sponge cake into a bowl: it will be used as decoration. (This step is not performed in the Thermomix).

Preparation of the white chocolate cream

Thermomix® Setting
2 min/Speed 3, 10 sec/Speed 2

Insert the fresh cream into the clean Thermomix bowl. Whip until stiff for 2 Min./Stufe 3. Add the chopped white chocolate and mix for 10 Sek./Stufe 2.

Assembly and decoration

Fill the sponge cake hearts with the white chocolate cream. Decorate with sponge cake crumbs and sugar little roses. (This step is not performed in the Thermomix).
