Ingredients (15 ingredients)

  • 4 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 3 cups white sugar
  • 1.67 cups milk
  • 6 piece eggs
  • 1 tablespoon vanilla extract
  • 2.5 cups unsalted butter, melted
  • 3 piece apples, peeled and diced
  • 2.5 cups unsalted butter
  • 2 pounds confectioners' sugar
  • 0.5 cup milk
  • 5 tablespoons ground cinnamon
  • 2 tablespoons ground nutmeg

Preparation (10 steps)

Preheat oven and prepare muffin tins

Preheat the oven to 350 degrees F (175 degrees C). Line 24 mini muffin tins with paper cups or grease with butter. This step is done outside of the Thermomix.

Combine dry ingredients

Add 4 cups all-purpose flour, 2 tablespoons baking powder, 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg to the Thermomix bowl. Mix for 10 Sec./Stufe 4 to combine.

Combine wet ingredients

20 sec/Speed 4

Add 3 cups white sugar, 1 ⅔ cups milk, 6 eggs, and 1 tablespoon vanilla extract to the Thermomix bowl. Mix for 20 Sec./Stufe 4 until well combined.

Add melted butter

10 sec/Speed 3

With the Thermomix running at Stufe 3, gradually add 2 ½ cups unsalted butter, melted, to the mixture. Mix for 10 Sek./Stufe 3 to combine.

Combine wet and dry ingredients

Add the flour mixture to the Thermomix bowl. Mix for 20 Sek./Stufe 3 until just combined. Use a spatula to scrape down the sides of the bowl if needed.

Fold in apples

Add 3 apples, peeled and diced, to the Thermomix bowl. Mix on Linkslauf Stufe 2 for 10 Sek. to gently fold in the apples.

Pour batter into muffin cups

Pour batter into the prepared mini muffin cups, filling each about 2/3 full. This step is done outside of the Thermomix.

Bake cupcakes

Bake in the preheated oven until golden, about 15 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert cupcakes carefully onto a serving plate or cooling rack. Let cool completely, at least 15 minutes, while making the icing. This step is done outside of the Thermomix.

Prepare the icing

Thermomix® Setting
30 sec/Speed 4, 10 sec/Speed 5

Add 2 ½ cups unsalted butter, 2 pounds confectioners' sugar, ½ cup milk, 5 tablespoons ground cinnamon, and 2 tablespoons ground nutmeg to the Thermomix bowl. Mix for 30 Sek./Stufe 4, then increase to Stufe 5 for 10 Sek. until smooth and creamy.

Frost the cupcakes

Spread icing over the cooled cupcakes. This step is done outside of the Thermomix.
