Description

This creamy sweet potato and lentil curry from the Thermomix® is a vegan and gluten-free main course with sweet potatoes, peppers, onions, and lentils. Preparation as a soup takes about 45 minutes and yields 3 servings. Ideal for a healthy, warm, and spicy meal with Asian influences. Perfect for light cuisine or as a family meal.

Ingredients (13 ingredients)

  • 450 g Sweet potatoes
  • 1 große red bell pepper
  • 2 Garlic cloves
  • 2 mittelgroße Onions
  • 1 EL Olive oil
  • 2 EL Tomato paste
  • 2 TL Curry powder
  • 2 TL Turmeric powder
  • 1 TL Garam Masala
  • Salt and pepper
  • 200 g Red lentils
  • 500 ml Coconut milk
  • 250 ml Vegetable broth

Preparation (5 steps)

Prepare the vegetables

Peel and dice 450g sweet potatoes. Dice 1 large red bell pepper. Peel 2 garlic cloves. Finely chop 2 medium-sized onions.

Chop the onions

Place the onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté the onions

Add 1 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Chop and sauté the garlic

Add the garlic to the mixing bowl and chop for 3 sec./speed 7. Then briefly sauté with the onions for 1 min./120°C/speed 1.

Add remaining ingredients and simmer

Add sweet potatoes, peppers, 2 tbsp tomato paste, 2 tsp curry powder, 2 tsp turmeric powder, 1 tsp Garam Masala, salt and pepper, 200g red lentils, 500ml coconut milk, and 250ml vegetable broth to the mixing bowl and simmer for 25 min./100°C/Reverse/speed 1.
