Description

This beans, zucchini and coconut milk curry is a tasty and comforting vegetarian dish. I love to prepare it in the spring, when fresh beans are in season. The sweetness of coconut milk goes perfectly with the spices and vegetables. It's a dish I often make for a Sunday brunch or a casual dinner with friends. It is easy to prepare and can be served with rice, naans or bread. Feel free to add other vegetables such as peppers or spinach for variety. A real treat for the taste buds!

Ingredients (12 ingredients)

  • 1 c à c ground coriander seeds
  • 2 c à s minced ginger
  • 1 c à c ground cumin seeds
  • 1 c à c turmeric
  • 40 cl coconut milk
  • 0.5 c à c red curry paste
  • 1 piece tomato
  • 2 c à s peanut oil
  • 1 piece large onion
  • 2 piece small zucchinis
  • 1 kg whole beans (unshelled)
  • 8 piece fresh eggs

Preparation of beans

Thermomix® Setting

Shell the beans. Put them in the cooking basket and pour 1 liter of water into the bowl. Cook the beans for 10 Min./100°C/Stufe 1. Once cooked, remove the second skin from the beans and set aside.

Cooking soft-boiled eggs

Put the eggs in the cooking basket and pour 1 liter of water into the bowl. Cook the soft-boiled eggs for 5 Min./100°C/Stufe 1. Cool the eggs under cold water and set aside.

Preparation of onions and ginger

Peel and cut the onion in half. Put the onion in the bowl and chop 3 Sek./Stufe 5. Add the minced ginger and peanut oil.

Cooking onions and ginger

Sauté the onions and ginger for 3 Min./120°C/Stufe 1.

Adding spices and curry paste

Add the ground coriander seeds, ground cumin seeds, turmeric and red curry paste to the bowl. Fry for 2 Min./120°C/Stufe 1.

Adding vegetables and coconut milk

Cut the tomato and zucchini into dice. Add the shelled beans, tomato and zucchini to the bowl. Add the coconut milk and salt. Bring the curry to a boil and cook for 5 Min./100°C/Stufe 1.

Reheating the eggs

Put the soft-boiled eggs in the curry to reheat them for 1 Min./60°C/Sanftrührstufe/Linkslauf.
