Description

This potato curry is a wonderfully warming dish that I especially like to prepare on cooler days. The combination of spicy curry, creamy potatoes and the gently cooked egg is simply unbeatable. The dish is vegetarian and can be prepared well in advance. Preparation in the Thermomix® makes it particularly easy and quick. I prefer to use waxy potatoes, as they retain their shape better when cooked. A dash of lemon juice at the end gives the curry a fresh note. Perfect as a main course or as a filling side dish!

Ingredients (10 ingredients)

  • 1000 g Potato(es)
  • 50 g Ginger
  • 1 piece Tomato(es)
  • 8 Stiele Coriander
  • 1 piece Onion(s)
  • 1 tbsp Butter
  • 2 tbsp Curry powder
  • 500 ml Vegetable stock
  • 100 ml Salt
  • 4 piece Egg(s)

Preparation (8 steps)

Prepare onions, ginger and potatoes

Peel 1 onion, halve and place in the mixing bowl. Peel 50 g ginger and cut into coarse pieces, also place in the mixing bowl. Peel 1 kg potatoes, cut into cubes and set aside.

Chop the onion and ginger

Chop the onion and ginger in the mixing bowl for 3 sec./speed 5. Push down with the spatula.

Sauté onion and ginger

Add 1 tbsp butter and sauté for 3 min./120°C/speed 1.

Add potatoes and curry

Place the diced potatoes in the mixing bowl. Sprinkle 2 tbsp curry powder over it.

Cook curry

15 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 500 ml vegetable stock and cook for 15 min./100°C/speed 1/reverse. Stir occasionally with the spatula.

Add tomatoes

Thermomix® Setting
1 min/212°F/Speed 1/Linkslauf 100 Reverse

Cut 1 tomato into cubes and place in the mixing bowl. Stir in for 1 min./100°C/speed 1/reverse.

Poach eggs (without Thermomix)

Heat 1 l of salt water in a separate pot and add a dash of vinegar. Crack the eggs individually into cups and carefully slide them into the gently simmering water. Cook for 4 min.

Arrange

Arrange the curry in bowls, place a poached egg on top and garnish with coriander leaves.
