Description

This chicken curry with coconut milk is a comforting and flavorful recipe, perfect for a weeknight dinner. The combination of spices such as turmeric, cumin and curry, along with the smoothness of coconut milk, creates an exquisite and aromatic dish. I prepare it often because it is very easy to make and always succeeds at home. In addition, it can be accompanied with basmati rice, quinoa or even naan bread to dip in the sauce. Ingredients (13 ingredients)

  • 2 piece chicken breasts
  • 1 piece onion
  • 2 clove garlic
  • 3 tbsp natural tomato
  • 200 ml coconut milk
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 pinch ginger
  • 1 pinch cinnamon
  • 2 tsp curry
  • 1 chorro oil

Preparation (5 steps)

Chop the onion and garlic

Introduce 1 onion in quarters and 2 cloves of garlic in the Thermomix bowl. Program 3 seconds/speed 5 to finely chop them.

Sauté the onion and garlic

Add 1 splash of oil to the Thermomix bowl. Program 3 minutes/120°C/speed 1 to sauté the onion and garlic.

Add the tomato and spices

Incorporate 3 tablespoons of natural tomato, 1 teaspoon of turmeric, 1 teaspoon of cumin, 1 pinch of ginger, 1 pinch of cinnamon, 2 teaspoons of curry, 1 pinch of salt and 1 pinch of pepper to the bowl. Program 5 seconds/speed 3 to mix well.

Cook the chicken

Cut 2 chicken breasts into medium pieces. Add the chicken to the Thermomix bowl. Program 15 minutes/100°C/speed 1/reverse rotation. It is important that the chicken is not fully cooked in this step so that it does not dry out.

Add the coconut milk

5 min/194°F/Speed 1/Linkslauf 90 Reverse

Pour 1 can of coconut milk (200 ml) into the Thermomix bowl. Program 5 minutes/90°C/speed 1/reverse rotation so that all the flavors are integrated.
