Description

This coconut chicken curry is a comforting and flavorful dish, perfect for a weeknight dinner or to surprise your guests. The combination of tender chicken with the creaminess of coconut milk and the exotic touch of spices makes it an irresistible dish. I prepare it often because it is very easy and quick to make with the Thermomix®, and it always triumphs. Also, you can adjust the level of spiciness to your liking, adding more or less red curry. Go ahead and try it, you'll love it! Serve with basmati rice for a complete and delicious meal.

Ingredients (11 ingredients)

  • 1 kg Chicken in breasts or boneless thighs
  • 150 g Onion
  • 3 clove Garlic
  • 400 ml Coconut milk
  • 300 g Tomatoes in natural preserve
  • 3 tbsp Ground curry (may be yellow or a mixture of yellow and red)
  • 1 pinch Ground turmeric
  • 1 pinch Ground cumin
  • 1 pinch Ground ginger
  • Salt
  • Ground black pepper

Preparation (4 steps)

Crush onion and garlic

Thermomix® Setting

Introduce 150 g of onion and 3 cloves of garlic into the Thermomix glass. Crush for 5 seconds at speed 5.

Sauté onion and garlic

Add oil to the glass and sauté for 7 minutes at Varoma temperature and speed 2.

Crush tomato

Add 300 g of tomatoes in natural preserve to the glass and crush for 10 seconds at speed 4.

Cook the curry

Thermomix® Setting
17 min/212°F/Speed 1 100

Add 1 kg of chicken, diced, 400 ml of coconut milk, 2 tablespoons of yellow curry, 1 tablespoon of red curry, a pinch of ground turmeric, a pinch of ground cumin and a pinch of ground ginger to the glass. Program 17 minutes, at 100 degrees and speed 1.
