Description

This green vegetable coconut curry is a vegetarian main course that can be easily prepared with the Thermomix®. It contains broccoli, spinach, snow peas, and cashews. The preparation time is 45 minutes, and the dish is designed for 2 servings. Ideal for a quick and healthy meal.

Ingredients (16 ingredients)

  • 100 g Whole Grain Basmati Rice
  • Salt
  • 150 g Frozen Green Beans
  • 200 g Bimi (Tenderstem Broccoli; alternatively broccoli florets)
  • 125 g Snow Peas
  • 1 Stück Onion
  • 1 Stück Garlic Clove
  • 15 g Ginger
  • 2 TL Virgin Coconut Oil
  • 2 TL Red Curry Paste
  • 2 TL Tomato Paste
  • 1 Dose Coconut Milk (200 ml)
  • 100 g Baby Spinach
  • Freshly Ground Pepper
  • 1 EL Lime Juice
  • 25 g Cashews

Cook Rice

Cook 100 g whole grain basmati rice according to package instructions in 1/4 l of lightly salted water in the simmering basket, covered, for approx. 30 minutes / 100°C / speed 1 until the water is completely absorbed. Then let the rice steam uncovered.

Prepare Vegetables

Thaw 150 g frozen green beans. Wash 200 g Bimi (Tenderstem Broccoli; alternatively broccoli florets), trim the stem ends and roughly chop the Bimi. Clean, wash and halve 125 g snow peas diagonally. Peel and slice 1 onion and 1 clove of garlic. Peel and finely dice 15 g ginger.

Sauté Onion, Garlic and Ginger

Place 1 onion, 1 clove of garlic and 15 g ginger in the mixing bowl and chop for 3 sec./speed 5. Add 2 tsp virgin coconut oil and sauté for 3 min./120°C/speed 1.

Sauté Curry Paste and Tomato Paste

Add 2 tsp red curry paste and 2 tsp tomato paste and sauté, stirring, for 1 min./120°C/speed 1.

Cook Curry

10 min / 212°F / Speed 1 212°F

Pour in 1 small can of coconut milk (200 ml) and 125 ml of water and bring to a boil, stirring, for 10 min./100°C/speed 1. Add the prepared green vegetables (150 g frozen green beans, 200 g Bimi, 125 g snow peas) to the mixing bowl and simmer, covered, over medium heat for about 10 minutes / 100°C / speed 1.

Add Spinach and Season

Pick through, wash and drain 100 g baby spinach well. Add to the curry and season everything with salt, freshly ground pepper and 1 tbsp lime juice. Roughly chop 25 g cashews.

Serve

Serve the curry with the rice and sprinkle with cashews.
