Description

This parsnip and maple cake is a delightful treat, perfect for a cozy autumn afternoon.   • 175 g butter
  • 250 g demerara sugar
  • 100 ml maple syrup
  • 3 piece large eggs
  • 250 g self-raising flour
  • 2 tsp baking powder
  • 2 tsp mixed spice
  • 250 g parsnips
  • 1 piece medium eating apple
  • 50 g pecans
  • 250 g mascarpone

Prepare the oven and baking tins

Preheat the oven to 180°C (160°C fan/gas mark 4). Grease two 20cm sandwich tins and line the bases with baking parchment. No Thermomix settings needed for this step.

Melt butter, sugar, and maple syrup

Add 175g butter, 250g demerara sugar, and 100ml maple syrup to the mixing bowl. Melt for 3 Min./50°C/Stufe 2.

Cool the mixture slightly

Let the mixture cool slightly in the mixing bowl. No Thermomix settings needed for this step.

Whisk in the eggs

Add 250g self-raising flour, 2 tsp baking powder, and 2 tsp mixed spice to the mixing bowl. Mix for 30 Sek./Stufe 3.

Prepare parsnips, apple and pecans

Grate 250g parsnips and 1 medium eating apple. Chop 50g pecans. No Thermomix settings needed for this step.

Add grated parsnip, apple, and pecans

Add 250g tub mascarpone and 2 tbsp maple syrup to the mixing bowl. Mix for 15 Sek./Stufe 3.

Spread the mascarpone frosting over one cake and sandwich with the other. Dust with icing sugar just before serving. No Thermomix settings needed for this step.
