Description

This hearty potato and carrot stew is a warming main course for the cold season. With potatoes, carrots, Mettenden sausages, and cream, it is filling and easy to prepare. Preparation in the Thermomix® saves time and ensures an even result. Ideal for a quick lunch or dinner.

Ingredients (11 ingredients)

  • 800 g Carrots
  • 800 g Potatoes
  • 1 Stück Onion
  • 4 Stück Mettenden sausages
  • 1 EL Butter
  • 500 ml Vegetable broth
  • 2 TL Vegetable broth powder
  • 100 ml Cream
  • nach Geschmack Salt
  • nach Geschmack Nutmeg
  • 2 EL Chopped parsley

Preparation (8 steps)

Prepare vegetables

Peel the carrots and cut into slices. Peel the potatoes and cut into small cubes. Peel and quarter the onion. Cut the Mettenden sausages into slices. Chop the parsley.

Chop onion

Put the onion in the mixing bowl and chop for 3 sec./level 5. If necessary, push down with the spatula.

Sauté onion

Add butter and sauté for 3 min./120°C/level 1.

Sauté vegetables

Thermomix® Setting
2 min/248°F/Speed 1 120

Add carrots and potatoes and sauté for 2 min./120°C/level 1.

Simmer stew

Thermomix® Setting
30 min/212°F/Speed 1 100

Add vegetable broth (with vegetable broth powder) so that the vegetables are just covered. Simmer for 30 min./100°C/level 1.

Refine stew

Thermomix® Setting
1 min/194°F/Speed 1 90

Season with salt, nutmeg and parsley. Add cream and stir in for 1 min./90°C/level 1.

Thicken stew (optional)

If you like the stew creamier, you can crush it a little with the spatula.

Heat Mettenden sausages

Fry the Mettenden sausages in a pan without fat and then add to the stew and heat briefly.
