Description

This hearty kale is an absolute must for the cold season! I always prepare it a few days before Christmas, because the long simmering unfolds its full aroma. The kale is refined with white cabbage and onions and prepared with juicy pork belly. The goose fat provides a special flavor and prevents burning. It tastes best when it has steeped overnight and is slowly warmed up again the next day. A hearty dish that will delight the whole family!

Ingredients (5 ingredients)

  • 2.5 kg Kale frozen
  • 4 piece Onions
  • 0.5 kl. Head White cabbage
  • 800 g Pork belly
  • 300 g Goose fat

Preparation (6 steps)

Chop onions

Add 4 onions to the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Chop white cabbage

Thermomix® Setting

Cut 0.5 small head of white cabbage into coarse pieces, place in the mixing bowl and chop for 5 sec./speed 4. Scrape down the sides with the spatula.

Boil kale, white cabbage, onions and lard

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 2.5 kg of thawed kale, the chopped white cabbage, the chopped onions and 300 g of lard to the mixing bowl and bring to the boil for 10 min./100°C/speed 1.

Add pork belly and simmer

Thermomix® Setting
2880 min/194°F/Gentle stir speed/Linkslauf 90 Reverse

Remove the rind from 800 g of pork belly, add the pork belly to the kale in the mixing bowl after 30 minutes of cooking time and add some salt. Now simmer for 2880 min./90°C/gentle stir setting/reverse. Stir occasionally with the spatula.

Heat and season kale

15 min/212°F/Speed 1 100

Refrigerate the kale overnight and slowly heat it the next morning in the mixing bowl for 15 min./100°C/speed 1, bring to the boil again for 5 min./100°C/speed 1 and season with salt and pepper.

5 min/212°F/Speed 1 100

Bring the kale to the boil again for 5 min./100°C/speed 1 and season with salt and pepper.
