Description

These delicate rice cream puffs are a real treat for those looking for a gluten-free and, if desired, lactose-free alternative. The recipe is quick and easy to prepare with the Thermomix®, and the result is a light and fluffy cream puff, perfect for breakfast, a snack or as a dessert. I love them stuffed with custard or whipped cream, but they are also excellent plain, dusted with icing sugar. The rice flour gives them a particular consistency, making them irresistible. Ideal for those with food intolerances, but also for those who want to try something different and tasty!

Ingredients (5 ingredients)

  • 40 g lactose-free butter
  • 120 ml water
  • 1 pinch fine salt
  • 80 g rice flour
  • 2 piece medium eggs

Preparation of the basic mixture

Thermomix® Setting
3 min/212°F/Speed 2 100

In the Thermomix bowl, insert 40 g of lactose-free butter into small pieces, 120 ml of water and a pinch of fine salt. Cook for 3 Min./100°C/Stufe 2.

Adding the rice flour

2 min/212°F/Speed 3 100

Add 80 g of rice flour to the bowl and cook for 2 Min./100°C/Stufe 3. Mix well to blend the ingredients.

Cooling and adding the eggs

Transfer the dough to a bowl and let it cool slightly for about 10 minutes. Then, add one medium egg at a time to the bowl and mix for 20 Sek./Stufe 4 after each addition. Use the spatula to collect the dough from the walls of the bowl.

Forming the cream puffs

Transfer the dough to a pastry bag with a smooth nozzle. Form the cream puffs on a baking sheet lined with parchment paper. Preheat the oven to 200°C.

Baking in the oven

Bake the cream puffs in the preheated oven at 200°C for about 20-25 minutes, or until golden brown. Let cool completely before filling.
