Description

These French style macarons are a real treat! I often prepare them for birthdays or Sunday brunches. The French meringue gives them a light and crispy texture at the same time. The almond powder and icing sugar mix perfectly for a sweet and subtle flavor. Feel free to add bitter cocoa for a chocolate version. The key to success lies in the crusting time and monitoring the cooking. A real treat for the taste buds!

Ingredients (5 ingredients)

  • 250 g almond powder
  • 450 g icing sugar
  • 200 g egg whites
  • 50 g caster sugar or granulated sugar
  • to taste Bitter cocoa or unsweetened cocoa powder

Preparation (5 steps)

Mixing the powders

Thermomix® Setting

Put 250 g of almond powder and 450 g of icing sugar in the Thermomix bowl. Mix for 10 Sec./Stufe 10. Then sift the mixture into a salad bowl.

Whipping the egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk. Put 200 g of egg whites in the Thermomix bowl. Mix for 3 Min./Stufe 3.5. Then add 50 g of caster sugar in three additions while the Thermomix continues to mix at the same speed.

Coloring and mixing the powders

Remove the whisk. Add the dye (if desired) to the whipped egg whites. Then pour the mixture of almond powder and sifted icing sugar into the bowl. Mix gently with a spatula until a homogeneous paste is obtained.

Piping the macarons

Fill a piping bag fitted with a smooth nozzle (8-10mm) with the macaron batter. Arrange small circles of dough on a baking sheet covered with parchment paper.

Crusting and baking

Let the macarons crust in the open air for 30 minutes. Preheat the oven to 150-160°C. Bake the macarons and cook for 12 to 13 minutes, watching the cooking carefully.
