Description

These delicate meringues are a delightful treat, perfect for a light dessert or a sweet snack. I've been making these for years, and they always impress! The key is to add the sugar slowly to create a glossy, stable meringue. They're naturally gluten-free and vegetarian, making them a great option for various dietary needs. These meringues are wonderful served with whipped cream and fresh berries, or even as part of a more elaborate dessert. They are perfect for a brunch or festive occasion. They are best enjoyed fresh, but can be stored in an airtight container for a few days.

Ingredients (2 ingredients)

  • 4 piece large egg whites
  • 115 g caster sugar

Preparation (6 steps)

Preheat the oven

Preheat the oven to 110°C (conventional) or 100°C (fan). Line two baking sheets with non-stick liner or parchment paper.

Whisk egg whites

Place 4 large egg whites into the Thermomix bowl. Insert the butterfly whisk. Whisk for 3 Min./Stufe 3.5 until the mixture resembles a fluffy cloud and stands up in stiff peaks.

Add sugar gradually

With the butterfly whisk still in place, set the Thermomix to Stufe 3.5. Gradually add 115g caster sugar, one dessertspoonful at a time, allowing 3-4 seconds between each addition. Continue until all the sugar is incorporated. The mixture should be thick and glossy.

Shape the meringues

Remove the butterfly whisk. Scoop up a heaped dessertspoonful of the meringue mixture. Using another dessertspoon, ease it onto the prepared baking sheet to make an oval shape. Or just drop them in rough rounds, if you prefer.

Bake the meringues

Bake for 1 ½-1 ¾ hours in a fan oven, 1 ¼ hours in a conventional or gas oven, until the meringues sound crisp when tapped underneath and are a pale coffee colour.

Cool and serve

Leave the meringues to cool completely on the baking sheets or a cooling rack. Serve two meringues sandwiched together with a generous dollop of softly whipped double cream.
