Description

Delicate Vanilla Crescent Cookies are a Christmas Thermomix® recipe for approximately 40 cookies. The main ingredients are butter, flour, almonds, powdered sugar, and vanilla.   • 2 Stück Vanilla beans
  • 2 Stück Egg yolks (size M)
  • 80 g Powdered sugar
  • 1 Prise Salt
  • 200 g Wheat flour Type 405
  • 175 g Soft butter
  • 100 g Peeled and ground almonds
  • 100 g Powdered sugar
  • Flour for the work surface

Preparation (9 steps)

Prepare vanilla pulp

Cut the vanilla beans lengthwise and scrape out the pulp with a knife. Set one vanilla bean aside.

Mix egg yolks

20 sec/Speed 3

Put 2 egg yolks, 80 g powdered sugar, 1 pinch of salt and the pulp of one vanilla bean into the mixing bowl and mix for 20 sec/speed 3.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 200 g wheat flour type 405, 175 g soft butter and 100 g peeled and ground almonds and knead for 2 min/kneading stage to form a smooth dough.

Shape and chill dough

Divide the dough evenly into two halves and form into two long rolls. Wrap the rolls in cling film and chill in the refrigerator for two hours.

Preheat oven

Preheat the oven to 180 degrees top/bottom heat (convection oven 160 degrees, gas mark 3).

Mix vanilla powdered sugar

Thermomix® Setting
10 sec/Speed 5

Put 100 g powdered sugar and the pulp of the second vanilla bean into the mixing bowl and mix for 10 sec/speed 5. Transfer and set aside.

Shape crescent cookies

Cut the rolls into evenly sized slices, so that there are about hazelnut-sized balls of dough. Leave the second roll in the refrigerator until ready to process. First form the slices into balls and then into small rolls about 8 cm long, which taper to a point at the ends. Place the cookies on a baking sheet lined with baking paper and bend into small crescent shapes. Leave a gap of 2-3 cm between the crescent cookies.

Bake crescent cookies

Bake the cookies on the middle rack for about 15 minutes. The vanilla crescent cookies should remain light in color.

Sprinkle crescent cookies

Remove the vanilla crescent cookies from the oven and immediately dust with the prepared vanilla powdered sugar. Leave to cool completely on the baking sheet.
