Description

These delicious shortcrust pastry cookies filled are a true pleasure for the palate! The shortcrust pastry, prepared with the Thermomix®, is crumbly and tasty. The filling of jam and hazelnut spread adds a touch of irresistible sweetness. Perfect for breakfast, snack or as a small dessert after dinner. The preparation is simple and quick, ideal for those who have little time but do not want to give up a homemade dessert. I love them and I often prepare them for my family! They keep well for several days in a tin box. Try them, you will not regret it!

Ingredients (8 ingredients)

  • 2 piece eggs
  • 350 g flour
  • 150 g sugar
  • 120 g butter
  • 1 packet vanillin
  • 1 tsp baking powder
  • jam
  • hazelnut spread

Eggs and sugar in the bowl

Break the eggs into the Thermomix bowl. Add the sugar.

Adding butter and vanillin

Add the butter in pieces and the sachet of vanillin into the bowl.

Adding flour and yeast

Add the flour and the level teaspoon of baking powder into the bowl.

Form the cookies

Remove the dough from the bowl, form a ball, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes. Roll out the dough on a floured surface and cut out discs with a cookie cutter. Fill half of the discs with jam to taste and the other half with hazelnut spread.

Baking in the oven

Close the cookies with another disc of shortcrust pastry and seal the edges well. Arrange the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for about 15 minutes, or until golden brown.
