Description

These potato rosettes from the Thermomix® are a festive and vegetarian side dish, ideal for Christmas or winter menus. The main ingredients are floury potatoes, butter, and egg yolks. Preparation takes about 70 minutes, including 45 minutes of work, and yields 6 servings. The recipe is excellent as a side dish to a main course or as a special dish for the whole family.

Ingredients (8 ingredients)

  • 800 g Potatoes (floury)
  • nach Geschmack Salt
  • 70 g Butter
  • 4 Egg yolks (size M)
  • nach Geschmack Pepper
  • 1 Prise(n) Nutmeg (grated)
  • 2 EL Milk
  • nach Geschmack Butter for the baking sheet

Preparation (10 steps)

Prepare potatoes

Wash, peel, and cut 800 g of potatoes (floury) into approx. 2 cm cubes.

Cook potatoes

Place the diced potatoes with enough salted water into the mixing bowl and cook for 20 min./100°C/speed 1 without the measuring cup.

Drain potatoes and let them steam

After cooking, drain the potatoes through the simmering basket and let them steam in the simmering basket for about 5 minutes. Empty and dry the mixing bowl.

Purée potatoes

20 sec/Speed 4

Put the steamed potatoes back into the mixing bowl and purée for 20 sec./speed 4. If necessary, push down with the spatula and repeat the process until the potatoes are finely puréed.

Add butter, egg yolks, and spices

Thermomix® Setting

Add 70 g of butter in small pieces, 3 egg yolks (size M), salt, pepper, and 1 pinch(es) of nutmeg (grated) to the puréed potatoes and mix for 20 sec./speed 3.

Fill purée into piping bag

Fill the potato purée into a piping bag with a large star nozzle.

Pipe rosettes

Grease a baking sheet thickly with butter. Pipe rosettes onto the baking sheet with some distance between them.

Prepare egg yolk-milk mixture

Whisk 1 egg yolk (size M) and 2 tbsp milk in a small bowl.

Brush rosettes

Brush the potato rosettes with the egg yolk-milk mixture.

Bake

Preheat the oven to 180 °C top and bottom heat. Bake the Duchess potatoes on the middle rack in the oven for about 25 minutes until golden brown.
