Description

This dome-shaped cake, inspired by the recipes of the Medici era, is a true delight for the palate and a triumph for the eyes. Its preparation requires a bit of time, but the result is an elegant and refined dessert, perfect for special occasions. The sponge cake soaked in alchermes pairs perfectly with the cream of cream and gelatin, enriched with candied citron and cherries. A touch of dark chocolate and bitter cocoa completes this symphony of flavors. Ideal for a birthday or an important dinner, this cake will leave everyone speechless!

  • 1 piece Sponge cake
  • 1 q.b. Alchermes
  • 1 q.b. Whole milk
  • 1 q.b. Fresh liquid cream
  • 1 q.b. Icing sugar
  • 1 q.b. Isinglass
  • 1 q.b. Hot milk
  • 1 q.b. Candied citron
  • 1 q.b. Candied cherries
  • 1 q.b. Dark chocolate
  • 1 q.b. Bitter cocoa
  • 1 q.b. Granulated sugar
  • 1 q.b. Butter
  • 1 q.b. Water

Preparation (3 steps)

Whip the cream

Thermomix® Setting
3 min/Speed 3.5

Insert the fresh liquid cream and icing sugar into the bowl. Whip with the butterfly for 3 Min./level 3.5. Transfer the whipped cream to a bowl and set aside.

Prepare the gelatin

Thermomix® Setting
20 sec/Speed 2

Soak the isinglass in cold water for about 10 minutes. Squeeze the isinglass and dissolve it in the hot milk. Mix well until completely dissolved. Pour the milk with the gelatin into the bowl and mix for 20 Sec./level 2.

Incorporate the gelatin into the cream

Pour the milk and gelatin mixture (lukewarm) into the bowl with the whipped cream. Gently mix with a spatula from the bottom up to incorporate it.
