Description

These cassava sweetmeats with coconut, inspired by an Asian recipe, are an exotic delight easy to make with the Thermomix®. The grated cassava, mixed with the sweetness of coconut milk and coated with fresh coconut, offers a melting texture and a subtly sweet taste. I often prepare this dessert for special occasions or simply for a gourmet break. Steaming preserves all the flavor of the cassava. An original and tasty dessert that is sure to please! It is perfect to end a meal on a light and fragrant note. Feel free to adjust the amount of sugar to your preferences.

Ingredients (5 ingredients)

  • 700 g grated fresh coconut flesh
  • 1 pinch salt
  • 20 cl coconut milk
  • 110 g caster sugar
  • 500 g cassava root

Preparation of the cassava

Thermomix® Setting
10 sec/Speed 5

Peel the cassava root and cut it into pieces. Place the pieces of cassava in the Thermomix bowl and grate finely for 10 Sec./Stufe 5. Scrape the sides of the bowl with the spatula.

Mixing the ingredients

Add 700g of grated fresh coconut flesh, 20 cl of coconut milk, a large pinch of salt and 110g of caster sugar to the grated cassava in the Thermomix bowl. Mix gently with the spatula.

Steaming

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Pour 500 ml of water into the Thermomix bowl. Distribute the cassava mixture in the Varoma. Place the Varoma on the Thermomix and steam for 30 Min./Varoma/Stufe 1.

Cooling and plating

Once cooking is complete, let cool completely. Gently unmold and cut into small bite-sized pieces. Roll each bite in grated fresh coconut.
