Description

These ricotta and almond sweets are a real treat for the palate! The almond shortcrust pastry, prepared with my trusty Thermomix®, is incredibly crumbly and fragrant. The creamy sheep's ricotta filling, enriched with chocolate chips, creates a delicious contrast. Perfect for a tasty snack or as a dessert after a special dinner. Preparation takes a little time, but the result is guaranteed! A tip: try adding a pinch of cinnamon to the pastry for an extra touch. Ideal to serve in single-portion glasses, decorated with candied orange peel.

Ingredients (11 ingredients)

  • 100 g Butter
  • 100 g Almond flour
  • 50 g Cane sugar
  • 50 g Icing sugar
  • 250 g Sheep's ricotta
  • 150 g Flour 00
  • 2 pinch Salt
  • 1 piece Eggs
  • 1 piece Egg yolk
  • 50 g Chocolate chips
  • 1 piece Orange peel

Preparation (7 steps)

Preparation of the almond shortcrust pastry

Thermomix® Setting
20 sec/Speed 4

Insert the butter, almond flour, cane sugar, egg, egg yolk and two pinches of salt into the bowl. Mix for 20 Sec./Level 4.

Dough of the shortcrust pastry

Pour the mixture onto a pastry board with the flour 00 and quickly mix everything together with your hands until you obtain a soft dough. Form a loaf, wrap it in cling film and roll it out between two sheets of baking paper.

Cooling the dough

Place the rolled-out dough in the refrigerator for 30 minutes.

Baking the shortcrust pastry

Preheat the oven to 180°C. Bake the shortcrust pastry for 15 minutes.

Preparation of the ricotta cream

Thermomix® Setting
15 sec/Speed 3

In the clean bowl, insert the sheep's ricotta and icing sugar. Mix for 15 Sek./Level 3.

Adding the chocolate chips

Add the chocolate chips to the ricotta cream and mix gently with the spatula.

Assembling the glasses

When the shortcrust pastry is ready and cooled, break it up by hand in a rough manner. Put a little shortcrust pastry on the bottom of the glass, cover with the ricotta cream and decorate with candied orange peel.
