Description

These puff pastry empanadas stuffed with mushrooms are a delicious and easy-to-prepare bite, perfect for any occasion! The combination of fresh mushrooms sautéed with onion and garlic, wrapped in a crispy puff pastry, is simply irresistible. I usually use fresh mushrooms, but you can also experiment with other seasonal mushrooms. The preparation is very quick, ideal if you have little time. Serve these empanadas as an appetizer at a dinner with friends, as a starter in a family meal or even as a delicious snack. I assure you that they will fly off the plate! In addition, they are a very tasty vegetarian option.

Ingredients (9 ingredients)

  • 1 lámina rectangular puff pastry dough
  • 300 gramos fresh mushrooms
  • 1 piece onion
  • 2 dientes garlic
  • 1 cucharada postre thyme
  • 1 cucharada sopera butter
  • 1 pinch black pepper
  • 1 pinch salt
  • 1 piece egg

Preparation (7 steps)

Chop the onion and garlic

Place 1 onion in quarters and 2 cloves of garlic in the bowl. Chop for 3 Sec./Stufe 5.

Sauté the onion and garlic

Add 1 tbsp of butter to the bowl. Sauté for 3 Min./120°C/Stufe 1.

Add and cook the mushrooms

Thermomix® Setting
1 min/248°F/Speed 1/Linkslauf 120 Reverse

Add 300 g of sliced mushrooms, 1 tsp of thyme, 1 pinch of salt and 1 pinch of black pepper to the bowl. Cook for 1 Min./120°C/Stufe 1/Linkslauf.

Cool the filling

Pour the filling into a bowl and let it cool slightly.

Fill and close the empanadas

Spread 1 sheet of rectangular puff pastry and cut it into squares. Distribute the mushroom filling in the center of half of the squares. Cover with the remaining squares and seal the edges. Prick the surface with a fork.

Brush with egg

Beat 1 egg and brush the surface of the empanadas with the beaten egg.

Bake the empanadas

Preheat the oven to 180°C. Bake the empanadas for 20-30 minutes, or until golden brown.
