Description

This endive and carrot salad is a true autumnal delight! I love the combination of the crunchiness of the walnuts, the sweetness of the honey and the spiciness of the ginger. It is a salad that I often prepare to accompany a main course or simply as a fresh and light starter. The homemade vinaigrette, prepared in the Thermomix®, is incredibly smooth and stable. A real treat for the taste buds, and so simple to make! Perfect for a Sunday brunch or a festive meal.

Ingredients (13 ingredients)

  • 200 g Carrot
  • 200 g Endive
  • Lemon juice
  • Lime juice
  • 60 g Walnut kernels
  • 5 c. à soupe Oil
  • Mild mustard
  • 1 c. à café Acacia honey
  • 1 c. à soupe Honey vinegar
  • 15 g Chopped shallot
  • 1 pinch Ginger powder
  • Salt
  • Mill pepper

Preparation (5 steps)

Grated carrots and cut endives

Thermomix® Setting

Peel the carrots and cut them into pieces suitable for the size of the Thermomix opening. Put the carrots in the bowl and grate them for 5 Sek./Stufe 5. Transfer the grated carrots to a salad bowl. Cut the endives into pieces and add them to the salad bowl.

Preparation of lemon juices

Squeeze the juice from the lemons and limes. Pour the juices over the carrots and endives in the salad bowl. Mix gently.

Chop the walnuts

Put the walnut kernels in the Thermomix bowl and coarsely chop them for 3 Sek./Stufe 5. Add the chopped walnuts to the carrots and endives.

Preparation of the vinaigrette

Thermomix® Setting
2 min/Speed 4

Put the oil, mild mustard, acacia honey, honey vinegar, chopped shallot, ginger powder, salt and pepper in the Thermomix bowl. Mix for 2 Min./Stufe 4 to obtain a smooth and stable emulsion.

Assembly and service

Pour the vinaigrette over the carrot, endive and walnut salad. Mix gently to coat all the ingredients well. Serve immediately or refrigerate until ready to serve.
