Description

This Chicken Caesar Salad is a delightful twist on a classic, perfect for a light lunch or a satisfying dinner. I've been making this salad for years, and the homemade croutons really elevate the dish. The creamy dressing, made with anchovies and garlic, adds a burst of flavor that complements the juicy chicken and crisp lettuce. It's quick to prepare, especially with the Thermomix®, and always a crowd-pleaser. Feel free to add some crispy bacon for an extra layer of deliciousness. This salad is a great way to enjoy a healthy and flavorful meal any time of year!

Ingredients (9 ingredients)

  • 1 piece medium ciabatta loaf
  • 3 tbsp olive oil
  • 2 piece skinless, boneless chicken breasts
  • 1 piece large cos or romaine lettuce
  • 1 clove garlic clove
  • 2 piece anchovies
  • 1 piece medium block parmesan
  • 5 tbsp Mayonnaise
  • 1 tbsp white wine vinegar

Preparation (8 steps)

Prepare the Croutons

Preheat oven to 200°C. Tear the ciabatta loaf into large croutons. Place the croutons on a baking sheet and drizzle with 2 tbsp olive oil. Toss to coat evenly.

Bake the Croutons

Bake the croutons for 8-10 minutes, turning them a few times, until golden brown and crispy.

Prepare the Chicken

Rub the chicken breasts with 1 tbsp olive oil and season with salt and pepper. Heat a pan over medium heat. Place the chicken in the pan and cook for 4 minutes on each side, or until cooked through.

Prepare Garlic

Place 1 garlic clove into the mixing bowl and chop 3 Sec. / Level 7.

Prepare Anchovies

Add 2 anchovies to the mixing bowl and chop 3 Sec. / Level 7.

Make the Dressing

Thermomix® Setting
10 sec/Speed 3

Add a handful of grated parmesan cheese, mayonnaise, and white wine vinegar to the mixing bowl. Season to taste. Mix 10 Sec. / Level 3. If the dressing is too thick, add a few teaspoons of water and mix again 5 Sec. / Level 3.

Assemble the Salad

Tear the lettuce into large pieces and place in a large bowl. Slice the cooked chicken into bite-sized strips. Add half of the chicken and half of the croutons to the lettuce.

Dress the Salad

Add most of the dressing to the salad and toss gently. Top with the remaining chicken and croutons. Drizzle with the remaining dressing and sprinkle with shaved parmesan cheese. Serve immediately.
