Description

This avocado salad with chive vinaigrette is a refreshing and flavorful dish that's perfect for a light lunch or a side dish at a summer barbecue. I've been making this salad for years, and it's always a hit! The creamy avocado pairs perfectly with the tangy lemon juice and the fresh chives. Ingredients (6 ingredients)

1 tbsp lemon juice
1 pinch salt
4 tbsp olive oil
1 bunch finely chopped chives
200 g mixed salad leaves
2 slice ripe avocados

Preparation (2 steps)

Prepare the Vinaigrette

Add 1 tbsp lemon juice, a pinch of salt, and 4 tbsp olive oil to the Thermomix bowl. Add a small bunch of finely chopped chives. Secure the lid and blend for 10 Sec./Stufe 3.

Assemble the Salad

In a large bowl, gently toss the 200g mixed salad leaves with the prepared vinaigrette. Add 2 sliced ripe avocados and toss gently to combine. Serve immediately.
