Description

This potato egg salad with bell pepper is a real classic that should not be missing at any party! I have been making it since I was a child and it is always well received. The combination of creamy mayonnaise, yogurt and the crunchy potato cubes is simply unbeatable. I particularly like the slightly sweet note of the grilled bell pepper. The salad can be prepared well in advance and still tastes delicious the next day. Perfect for a buffet or as a side dish for grilling. A hearty salad that everyone will love!

Ingredients (8 ingredients)

  • 500 g Potatoes (waxy)
  • 200 g Salt
  • 6 piece Eggs (size M)
  • 200 g Grilled bell pepper (jar, drained)
  • 200 g Mayonnaise
  • 100 g Yogurt (3.8%)
  • 1 Spritzer Lemon juice
  • 100 g Pepper

Preparation (7 steps)

Prepare potatoes

Peel 500 g potatoes (waxy) and cut into approx. 1 cm cubes. Place the potato cubes in the simmering basket.

Prepare eggs

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Put 6 eggs (size M) in the mixing bowl. Add 1 liter of water to the mixing bowl, insert the simmering basket and close the lid.

Cool potatoes and eggs

After the cooking time, remove the simmering basket with the potatoes and the eggs and let both cool. Peel the eggs.

Chop eggs

Thermomix® Setting
3 sec/Speed 4

Put 4 eggs in the mixing bowl and chop for 3 sec./speed 4. Transfer.

Prepare salad dressing

Thermomix® Setting
10 sec/Speed 3

Put 200 g mayonnaise, 100 g yogurt (3.8%), 1 splash of lemon juice, 200 g salt and 100 g pepper in the mixing bowl and mix for 10 sec./speed 3.

Mix salad

Place the cooled potato cubes, the chopped eggs and 200 g grilled bell pepper (jar, drained and cut into strips) in a bowl. Add the dressing from the mixing bowl and mix everything carefully.

Decorate and serve salad

Decorate the salad with the remaining 2 eggs (quartered lengthwise) and serve.
