Description

This red cabbage salad with carrots and raisins is a refreshing and healthy salad that is ideal as a starter or side dish. The salad is vegan and vegetarian and can be prepared quickly and easily. The combination of sweet raisins, crunchy carrots and spicy red cabbage makes this salad a special taste experience. Perfect for autumn!

Ingredients (10 ingredients)

  • 1 piece Orange
  • 50 g Raisins
  • 500 g Red cabbage
  • 200 g Carrots
  • 4 Stängel Flat-leaf parsley
  • 3 tbsp Nut or avocado oil
  • 2 tbsp Apple vinegar
  • 0.5 tsp Ground cinnamon
  • to taste Salt
  • to taste Pepper

Preparation (4 steps)

Squeeze orange and soak raisins

Squeeze the orange. Soak the raisins in the orange juice for 15-20 minutes.

Prepare red cabbage and carrots

Divide the red cabbage into leaves and remove the hard midribs. Wash the leaves, shake dry and chop coarsely. Peel, clean and coarsely chop the carrots. Wash the parsley, shake dry and pluck the leaves from the stalks.

Chop red cabbage and carrots

Place 500 g red cabbage and 200 g carrots in the mixing bowl and chop for 5 sec/speed 5 with the help of the spatula.

Add 50 g raisins with orange juice, 4 sprigs of flat-leaf parsley, 3 tbsp nut or avocado oil, 2 tbsp apple cider vinegar, ½ tsp ground cinnamon, salt and pepper and mix for 5 sec/speed 3. Season the salad again with salt and pepper and divide on four plates.
