Description

This Fitmacher salad is a light and healthy dish, ideal for a low-calorie diet. It consists of fresh ingredients such as peppers, carrots, cucumber and kohlrabi, which are refined with a delicious dressing of olive oil, white wine vinegar and herbs. The salad is quick to prepare and is perfect as a starter or light main course. Preparation takes about 25 minutes and yields 4 servings.

Ingredients (10 ingredients)

  • 3 Stück red pepper
  • 5 Stück Carrots
  • 1 Stück Cucumber
  • 2 Stück Kohlrabi
  • 3 Stück Shallots
  • 1 Stück Garlic clove
  • 7 EL Olive oil
  • 4 EL White wine vinegar
  • Salt and pepper
  • 0.5 Bund mixed herbs

Preparation (5 steps)

Prepare vegetables

Halve the pepper, core and cut into strips. Peel the carrots and kohlrabi and cut into strips as well. Halve the cucumber lengthwise, core with a teaspoon and cut into strips.

Chop shallots and garlic

Peel 3 shallots and chop in the Thermomix for 3 sec./level 5. Add 1 clove of garlic and chop for another 3 sec./level 7.

Chop herbs

Wash, shake dry and roughly chop 1/2 bunch of mixed herbs. Add the chopped herbs to the mixing bowl and chop for 3 sec./level 4.

Prepare dressing

Add 7 tbsp olive oil, 4 tbsp white wine vinegar, the chopped shallots, garlic and herbs to the mixing bowl. Season with salt and pepper and stir for 10 sec./level 3.

Mix salad

Put the prepared vegetables in a bowl and mix with the dressing. Let the salad steep briefly before serving.
