Description

This romaine salad with chicken and parmesan is a revisited classic, perfect for a light lunch or a tasty appetizer. I love preparing it because it is quick, easy and always appreciated. The grilled chicken adds a gourmet touch, while the homemade caesar sauce, prepared in a flash with the Thermomix®, enhances everything. Feel free to add some cherry tomatoes for an extra touch of freshness. A real treat for the taste buds!

Ingredients (13 ingredients)

  • 1 piece Romaine lettuce
  • 2 piece Chicken breast
  • 50 g Croutons
  • 25 g Parmesan
  • 4 piece Anchovies in oil
  • 1 clove Garlic
  • 1 piece Egg yolk
  • 2 c. à soupe Olive oil
  • 2 c. à soupe Grated parmesan
  • 1 c. à soupe Mustard
  • 1 c. à café Lemon juice
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Preparation of the lettuce

Cut the foot of the romaine lettuce, detach the leaves, wash them carefully and drain them. Then cut the salad into strips and set aside.

Cooking the chicken

In a pan with a drizzle of oil, brown the chicken breasts on both sides for about 10 minutes, until they are well cooked. Set aside.

Preparation of garlic and anchovies

Thermomix® Setting
5 sec/Speed 8

Peel the garlic clove. Put the garlic and anchovies in oil in the Thermomix bowl and mix 5 Sec./Stufe 8.

Making the caesar sauce

Thermomix® Setting
20 sec/Speed 4

Add the egg yolk, mustard, olive oil, grated parmesan, lemon juice, salt and pepper to the Thermomix bowl. Mix 20 Sek./Stufe 4.

Assembling the salad

In a salad bowl, pour the lettuce, parmesan shavings and croutons. Cut the chicken breasts into strips and add them to the salad. Coat with caesar sauce and serve immediately.
