Description

This recipe for stuffed veal cutlets is a hearty main course that is filled with cheese and ham and then breaded. The preparation takes some time, but the result is a delicious and satisfying dish for the whole family. The cutlets are pan-fried after the breading has been prepared with the help of the Thermomix®.

Ingredients (9 ingredients)

  • 4 Stück Veal cutlets
  • 4 Scheiben Cheese (e.g. Gouda, Emmentaler or young Gruyère)
  • 4 Scheiben Cooked ham
  • 3 Stück Eggs
  • 6 EL Flour
  • 150 g Breadcrumbs (mixed with Panko)
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Clarified butter

Preparation (5 steps)

Prepare breadcrumbs

Thermomix® Setting
5 sec/Speed 8

Place 150 g breadcrumbs (mixed with Panko) in the mixing bowl and chop for 5 sec/speed 8, if the breadcrumbs are too coarse. Then transfer to a bowl and set aside.

Prepare breading station

Thermomix® Setting
10 sec/Speed 4

Place 6 tbsp of flour on a flat plate. Place 3 eggs in the mixing bowl and whisk for 10 sec/speed 4. Pour the whisked eggs onto a deep plate. Place the prepared breadcrumbs on another flat plate.

Prepare cutlets

Place veal cutlets between 2 layers of cling film and flatten to about 0.5 cm thickness with a meat mallet. Fold cheese slices into small pieces and wrap in the slices of cooked ham. Place the ham packets on the cutlets and fold in all sides so that the filling is enclosed. Season the prepared cutlets with salt and pepper.

Bread cutlets

First turn the prepared cutlets in the flour, knocking off any excess flour. Then dip in the whisked eggs and then turn in the breadcrumbs so that they are completely covered.

Fry cutlets

Heat plenty of clarified butter in a pan (the meat must float). Fry the breaded Cordon Bleu one after the other over medium heat for about 8 minutes per side until golden brown and cooked through. Make sure that the cheese has enough time to melt.
