Description

This lemon plumcake is a real ray of sunshine on the table! Soft, fragrant and very easy to prepare with the Thermomix®, it is perfect for breakfast, a snack or a Sunday brunch. Its light texture and delicate lemon flavor make it irresistible. I often prepare it for my grandchildren's birthdays, and it always disappears in the blink of an eye! The preparation is really quick, and the result is guaranteed. Try it, and you won't regret it! Ideal to enjoy with a cup of hot tea or a glass of fresh milk.

  • Sugar

Insert the whole eggs and sugar into the bowl. Work for 3 Min./Stufe 4/no temperature until you obtain a frothy and swollen mixture.

Add a pinch of salt, potato starch and sifted flour a little at a time. Work for 2 Min./Stufe 3/no temperature.

Grate the zest of one lemon and squeeze half of it. Add the grated zest and lemon juice to the bowl. Mix for 30 Sec./Stufe 2/no temperature.

Incorporation of butter and yeast

Add the soft butter in pieces and the baking powder to the bowl. Mix everything well for 1 Min./Stufe 3/no temperature.

Preparation and cooking

Grease and flour a plumcake mold. Pour the mixture into the mold and level it. Bake in a preheated static oven at 180°C for about 35 minutes. Check for doneness with the toothpick test.

Cooling and serving

Remove the plumcake from the oven and let it cool completely on a wire rack before slicing and serving.
