Description

These cinnamon stars are a must during the Christmas season! I bake them every year and they are always a hit. The dough is easy to prepare and is guaranteed to succeed with the Thermomix®. The scent of cinnamon fills the whole house and the stars taste simply heavenly. They taste particularly good if you keep them in a cookie tin for a few days, then they are nice and soft. A great recipe for the whole family and perfect for giving as a gift!

Ingredients (5 ingredients)

  • 350 g ground almonds
  • 2 tsp Cinnamon
  • 3 piece Egg white (Gr. M)
  • 60 g Flour
  • 300 g Icing sugar

Mix almonds and cinnamon

Thermomix® Setting
10 sec/Speed 4

Put 300 g ground almonds and 2 tsp cinnamon into the mixing bowl and mix for 10 sec./speed 4.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 1 egg white, 60 g flour and 100 g icing sugar and knead for 2 min./kneading setting to form a smooth dough.

Cool dough

Wrap the dough in cling film and refrigerate for 2 hours.

Whisk egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the butterfly. Put 2 egg whites into the mixing bowl and whisk until stiff for 3 min./speed 3.5. Gradually sprinkle in 200 g icing sugar.

Prepare icing

Remove the butterfly and transfer the icing.

Roll out and spread dough

Roll out the dough between 2 layers of cling film to approx. 1 cm thick. Spread approx. 2/3 of the icing evenly and thinly on the dough.

Cut out stars

Use a star cutter to cut out stars from the dough. Dip the cutter in hot water in between. Place stars on a baking sheet lined with baking paper.

Bake cinnamon stars

Place the stars on a baking sheet lined with baking paper and bake in a preheated oven (top/bottom heat: 170 °C) for 10-15 minutes.

Process dough scraps

Knead dough scraps with remaining almonds. To do this, put the dough scraps and the remaining 50 g almonds into the mixing bowl and mix for 30 sec./speed 4.

Cool dough

Refrigerate the dough for approx. 30 minutes.

Roll out and bake again

Roll out the dough again, spread with the remaining icing and cut out. Bake cinnamon stars as before.
