Description

This poultry fricassee with curry is an explosion of exotic flavours! I love preparing this dish because it is both simple and original. The pieces of turkey, tender and tasty, are enhanced by the curry and the sweetness of the bananas and star fruit. The fresh cream brings a perfect smoothness to the sauce. It is an ideal dish for a friendly meal with family or friends. Serve it with basmati rice for a guaranteed taste journey! Feel free to adjust the amount of curry to your preference. A real delight!

Ingredients (16 ingredients)

  • 1 piece beautiful bay leaf
  • 1 piece beautiful sprig of thyme
  • 1 piece star fruit
  • Butter
  • Oil
  • Pepper
  • Salt
  • 2 piece bananas
  • 2 dl fresh cream
  • 4 piece carrots
  • 1 l veal stock
  • 1 petite branche celery
  • 1 gros onion
  • 1 c à c chopped parsley
  • 1 c à s curry
  • 1 kg turkey meat (thighs preferably or others)

Preparation (10 steps)

Meat preparation

Cut the turkey meat into cubes of approximately 3 cm.

Browning the meat

In a frying pan, brown the turkey cubes in a mixture of melted butter and oil until they are well golden. Set aside.

Preparing the onions

Cut the large onion into pieces of approximately 2 cm. Put the onion pieces in the Thermomix bowl and chop them for 3 Sek./Stufe 5.

Cooking the onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add a little oil to the Thermomix bowl and cook the chopped onions for 3 Min./120°C/Stufe 1.

Adding the meat and veal stock

Add the browned meat to the Thermomix bowl with the onions. Pour in 1 l of veal stock.

Preparing the vegetables

Cut the celery stalk and carrots into small pieces of approximately 1 cm.

Cooking the fricassee

Thermomix® Setting
25 min/212°F/Speed 1 100

Add the celery and carrot pieces to the Thermomix bowl. Also add 1 tbsp of curry, 1 tsp of chopped parsley, 1 beautiful sprig of thyme and 1 beautiful bay leaf. Salt and pepper. Program 25 Min./100°C/Stufe 1.

Preparing the bananas and star fruit

Meanwhile, peel the bananas and cut them into slices. Cut the star fruit into slices. Quickly brown the banana slices and star fruit slices on each side in a little butter in a frying pan.

Adding the fruit and cream

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

2 minutes before the end of cooking, add the bananas, star fruit and 2 dl of fresh cream to the Thermomix bowl. Program 2 Min./90°C/Linkslauf Stufe 1.

Service

Serve the curry poultry fricassee with rice preferably. If the sauce is too liquid, let it evaporate for a few minutes in the Thermomix at 100°C/Stufe 1 without the lid. You can also bind the sauce with cornstarch diluted in cold water.
