Description

This Filipino fried rice, known as Sinangag, is a comforting and flavorful recipe, perfect for a hearty breakfast or a quick dinner. The key is in the infused garlic oil, which gives the rice an unparalleled aroma and taste. I often prepare it with rice that I have left over from the previous day, so I make the most of the food! The crispy garlic chips and the fried egg on top give it the perfect finishing touch. If you like it spicy, you can add a chili pepper to the garlic oil. It is a very versatile and delicious recipe!

Ingredients (5 ingredients)

  • 200 g Basmati or jasmine type rice (cooked)
  • 3 dientes Garlic
  • 4 piece Egg
  • 50 ml Extra virgin olive oil
  • 1 piece Chili pepper (optional)

Preparation (6 steps)

Garlic in slices

Peel the garlic cloves and cut them into thin slices. Reserve.

Infuse the garlic oil

Thermomix® Setting
10 min/176°F/Giro inverso/Velocidad cuchara 80 Reverse

Place the extra virgin olive oil and the garlic slices in the Thermomix bowl. Program 10 Min./80°C/Reverse direction/Spoon speed. If desired, add a chili pepper.

Separate the garlic chips

Pour the infused oil into a container, reserving the garlic chips on absorbent paper so that they are crispy.

Fry the rice

Thermomix® Setting
5 min/212°F/Giro inverso/Velocidad 1 100 Reverse

Add 4 tablespoons of the garlic infused oil to the Thermomix bowl. Incorporate the cooked rice and program 5 Min./100°C/Reverse direction/Speed 1. Stir with the spatula to loosen the rice grains.

Fry the eggs

While the rice is frying, fry the eggs in a pan with the remaining oil (not in the Thermomix) to taste.

Serve

Serve the fried rice in bowls, add the crispy garlic chips on top and crown with a fried egg.
