Description

This festive beef roast with herb crust, prepared in the Thermomix®, is a hearty main course with beef roast, fresh herbs and beef stock. The recipe is particularly suitable for festive occasions such as Christmas or a winter Sunday dinner. The preparation takes about 200 minutes in total, of which 30 minutes are active working time. The recipe is designed for 8 servings and is ideal for the whole family.

Ingredients (13 ingredients)

  • 2000 g Beef roast
  • Salt
  • Pepper
  • 2 EL Rapeseed oil native
  • 600 ml Beef stock
  • 1 Bd. Chives
  • 0.5 Bd. Thyme
  • 1 Bd. Parsley
  • 1 Handvoll Basil leaves
  • 100 g Sweet cream butter
  • 2 Egg yolk
  • 7 EL Breadcrumbs
  • 2 EL Mustard medium hot

Preparation (8 steps)

Prepare beef roast

Pat the beef roast dry with kitchen paper and then season with salt and pepper. The meat should be well seasoned all around.

Sear beef roast

Heat 2 tbsp rapeseed oil in a pan. Sear the beef roast in it from all sides until it has a nice crust. Searing is NOT done in the Thermomix.

Braise beef roast

Place the seared beef roast in a baking dish. Pour in 600 ml beef stock. Cover the baking dish with a lid or aluminum foil and braise in the preheated oven at 180°C top/bottom heat for approx. 140 minutes.

Prepare herbs

Wash and shake dry chives, thyme, parsley and basil leaves. Then chop roughly.

Chop herbs

Place the prepared herbs in the mixing bowl and chop for 5 sec./speed 5. If necessary, use the spatula to push down from the edge and repeat the process.

Prepare herb mixture

20 sec/Speed 3

Add 100 g sweet cream butter, 2 egg yolks, 7 tbsp breadcrumbs and 2 tbsp mustard to the chopped herbs in the mixing bowl. Season with salt and pepper and mix for 20 sec./speed 3.

Apply and gratinate herb crust

Remove the roast from the oven and spread the herb mixture evenly over the meat. Turn the oven to grill function and gratinate the roast for another 10 minutes until the crust is golden brown.

Resting time

Remove the gratinated roast from the oven and let it rest for 15 minutes before carving.
