Description

This cardinal slice from the Thermomix® is a festive cake classic that impresses with meringue, sugar and fine cream. Preparation with the Thermomix® takes about 90 minutes and yields about 12 servings. Ideal as a dessert or sweet cake for special occasions. Suitable for those who enjoy baking and appreciate a classic dessert.

Ingredients (11 ingredients)

  • 10 Stück Egg white
  • 220 g Crystal sugar
  • 30 g Cornstarch
  • 4 Stück Egg yolk
  • 2 Stück Eggs
  • 60 g Fine crystal sugar
  • 1 TL Vanilla sugar
  • 1 Prise Salt
  • 80 g Flour
  • 0.5 l Whipped cream
  • 1 Glas Raspberry jam

Preparation (8 steps)

Whisk egg whites

Put 10 egg whites and 220 g crystal sugar into the mixing bowl and whisk with the butterfly attachment for 4 min./speed 3.5 until the mixture is stiff. Transfer and set aside.

Add cornstarch

30 sec/Speed 2 Reverse

Add 30 g cornstarch to the egg white mixture and carefully fold in.

Whisk egg yolks and eggs

Put 4 egg yolks, 2 eggs, 60 g fine crystal sugar, 1 tsp vanilla sugar and 1 pinch of salt in the mixing bowl and whisk until frothy for 3 min./speed 4.

Fold in flour

Thermomix® Setting
20 sec/Speed 3 Reverse

Add 80 g flour and fold in for 20 sec./speed 3.

Prepare baking paper

Cut 2 baking paper strips approx. 18-20 cm wide.

Pipe on mixture

First, pipe the egg white mixture on the outside and in the middle in 3 strips onto the baking paper strips. Then fill in between with the sponge mixture.

Baking

Bake at 160 degrees for approx. 30 minutes.

Filling

After baking, fill with raspberry jam and whipped cream.
