Description

I love preparing these cod fillets in batter! The batter, prepared with cold sparkling water and a touch of lemon, makes them incredibly crispy and light. Perfect as a tasty appetizer or as a main course accompanied by a fresh salad. The preparation is simple and quick, ideal for an impromptu dinner with friends. The secret lies in the very cold sparkling water and the oil temperature for a perfect frying. A dish that brings the taste of the sea to the table!

Ingredients (5 ingredients)

  • 500 g cod fillets, soaked and desalted
  • 300 ml cold sparkling water
  • 220 g flour
  • 1 piece lemons the grated peel
  • oil for frying

Batter preparation

Pour 300 ml of cold sparkling water into the bowl. Gradually add 220 g of flour, stirring with the Thermomix to avoid lumps. Add the grated zest of 1 lemon and mix well.

Heating the oil

Pour frying oil as needed into a pan and bring to heat. Make sure the oil reaches a temperature of about 170°C. This step is not performed with the Thermomix.

Coating the cod

Dip the cod fillets (500 g), previously soaked and desalted, into the prepared batter, making sure to cover all sides well. This step is not performed with the Thermomix.

Frying the cod

Dip the battered cod fillets in the hot oil and fry until golden brown, turning them occasionally. It will take about 5 minutes. This step is not performed with the Thermomix.

Draining and drying

Once ready, drain the fried cod fillets and place them on a sheet of absorbent paper to remove excess oil. This step is not performed with the Thermomix.

Serving

Bring the cod fillets to the table while still hot, perhaps accompanied by some slices of fresh lemon. This step is not performed with the Thermomix.
