Description

This recipe for fish fillet on a braised cucumber bed is a light and summery dish, perfect for a relaxed lunch or dinner. The braised cucumbers are refined with capers and pearl onions and form a delicious base for the tender fish. The cherry tomatoes add a fruity note, while the cream makes the vegetables nice and creamy. A touch of dill perfectly rounds off the dish. I think it's a great way to combine fresh fish and seasonal vegetables. Salt potatoes or rice go well with it.

  • 1.25 kg Braised cucumbers
  • 20 g Butter or margarine
  • 0.25 l Vegetable broth (instant)
  • 1 piece Capers
  • 1 Glas Pearl onions
  • 1200 g Cod tails
  • 1 piece Carrot
  • 1 piece Onion
  • 1 piece Bay leaf
  • 2 slice Lemon
  • 1 tsp Black peppercorns
  • to taste Salt
  • 125 g Cherry tomatoes
  • 125 g Whipping cream
  • 2 tbsp Light sauce thickener
  • to taste White pepper
  • 1 bunch Dill
  • to taste Dill blossoms

Preparation (8 steps)

Prepare and sauté cucumbers

Wash 1 ¼ kg braised cucumbers, peel and halve lengthwise. Remove the seeds with a spoon and cut the cucumber flesh into slices. Put 20 g butter or margarine in the mixing bowl and melt for 3 Min./120°C/speed 1.

Sauté cucumbers

5 min/248°F/Gentle stir speed 120

Place the sliced cucumber slices in the mixing bowl and sauté for 5 Min./120°C/gentle stir setting.

Add vegetable broth and ingredients

Add ¼ l vegetable broth, 1 capers, 1 jar (212 ml/ 110 g drained weight) pearl onions with the juice and cook for 10 Min./100°C/speed 1.

Prepare fish stock

Wash 4 cod tails (approx. 300 g each) and cut off the fins. Peel and chop 1 carrot and 1 onion. Add to the mixing bowl with 1 bay leaf, 2 lemon slices, 1 tsp black peppercorns and salt in approx. 1 1/2 liters of water and simmer for 5 Min./100°C/speed 1.

Cook the fish

Place the fish pieces in the steamer basket and insert it into the mixing bowl. Steam for 20 Min./Varoma/speed 1.

Refine vegetables

Thermomix® Setting
3 min/194°F/Speed 1 90

Remove the steamer basket and keep the fish warm. Clean, wash and quarter 125 g cherry tomatoes. Pour 125 g whipping cream into the cucumber vegetables, bring to the boil for 3 Min./90°C/speed 1 and sprinkle in approx. 2 tbsp light sauce thickener while stirring.

Add tomatoes and season

Add the tomato quarters to the vegetables and heat in them for 1 Min./90°C/speed 1. Season with salt and white pepper.

Arrange and serve

Wash, pat dry and finely chop 1 bunch of dill. Place the vegetables on a deep plate and arrange the fish on top. Serve sprinkled with dill. Garnish with dill blossoms as desired. Salt potatoes or rice taste good with it.
