Description

These chestnut stars are an absolute highlight during the Christmas season! I make them every year and they are always devoured in no time. The combination of chestnuts and walnuts gives the cookies a wonderfully nutty note that harmonizes perfectly with the cinnamon and ginger. The orange juice in the glaze gives them a fruity freshness. The preparation is a bit more complex, but it's definitely worth it! They taste best when they have been infused for a few days. Ideal for giving as a gift or snacking yourself!

Ingredients (12 ingredients)

  • 240 g Wheat flour Type 550
  • 3 tsp ground Cinnamon
  • 1 Msp. ground Ginger
  • 1 tsp Salt
  • 2 piece Eggs (size M)
  • 200 g Butter
  • 100 g Cane sugar
  • 1 Pck. Bourbon Vanilla sugar
  • 75 g pre-cooked Chestnuts
  • 75 g Walnut kernels
  • 300 g Flour for processing
  • 1 tbsp freshly squeezed Orange juice

Preparation (9 steps)

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Put 240 g wheat flour type 550, 3 tsp ground cinnamon, 1 pinch ground ginger and 1 tsp salt into the mixing bowl and mix for 10 sec./speed 4. Transfer and set aside.

Beat butter until fluffy

Thermomix® Setting
2 min/Speed 3

Put 200 g butter, 100 g cane sugar and 1 pack Bourbon vanilla sugar into the mixing bowl and beat until fluffy for 2 min./speed 3.

Stir in egg yolks

Thermomix® Setting
20 sec/Speed 3

Add 2 egg yolks (size M) one after the other and stir in for 20 sec./speed 3 each time.

Chop chestnuts and walnuts

Thermomix® Setting
10 sec/Speed 7

Put 75 g pre-cooked chestnuts and 75 g walnut kernels into the mixing bowl and chop for 10 sec./speed 7. Use the spatula to push down and, if necessary, chop for another 5 sec./speed 7.

Prepare dough

Thermomix® Setting
30 sec/Speed 4

Put the chopped chestnuts and walnuts together with the flour mixture into the mixing bowl and stir for 30 sec./speed 4 until a smooth dough is formed.

Chill dough

Flatten the dough, wrap in cling film and chill for at least 2 hours.

Preheat oven and cut out stars

Preheat the oven to 165 °C circulating air. Roll out the dough on a lightly floured work surface (with 300 g flour) to a thickness of approx. 5 mm, cut out stars and place them on 2 baking trays lined with baking paper.

Prepare glaze

20 sec/Speed 4

For the glaze, put powdered sugar, 1 egg white and 1 tbsp freshly squeezed orange juice into the mixing bowl and stir for 20 sec./speed 4 until a thick mixture is formed.

Coat and bake stars

Coat the stars thickly with the glaze. Bake the stars for approx. 10 minutes in the hot oven on the 2nd shelf from below, the glaze should remain light. Leave the stars to cool completely.
