Description

With the Thermomix® fine butter cookies are made in no time. This recipe for cookies uses flour, butter, sugar, egg yolks and lemon. The preparation time is 117 minutes, including cooling time, for one serving. Ideal as Christmas finger food, dessert or festive cookies. Perfect for the whole family.

Prepare dough

Thermomix® Setting

2 min/Kneading speed

Put 500 g Flour Type 405, 200 g Sugar (optional icing sugar), 1 pack Vanilla Sugar, 350 g cold Butter in flakes, 2 Egg yolks Size M, 1 Egg Size M, some grated organic lemon zest and 1 pinch of Salt into the mixing bowl. Process for 2 min./kneading stage to a smooth dough.

Cool dough

Remove the dough from the mixing bowl, put it in a closed bowl and refrigerate for at least 60 minutes.

Shape cookies

Roll out the chilled dough on a floured work surface and cut out with cookie cutters (e.g. stars or hearts). Place the cut out cookies on a baking sheet lined with baking paper.

Brush and bake cookies

Brush the cookies with some egg yolk and decorate to taste. Slide the baking sheet into the preheated oven and bake the cookies at 175 °C top/bottom heat for 10 - 12 minutes.
