Description

These fluffy yeast rolls are a delightful addition to any meal. I've been making them for years, and they always disappear quickly! The secret is in the warm water and letting the dough rise properly. They're perfect for serving alongside soups, stews, or as a simple side with butter. The melted butter brushed on top gives them a beautiful golden sheen and adds a touch of richness. These rolls are best enjoyed warm, straight from the oven. They are a vegetarian delight and bring comfort to any table.

Ingredients (7 ingredients)

  • 2.5 cups warm water
  • 1.5 tablespoons active dry yeast
  • 0.5 cup white sugar
  • 1 tablespoons salt
  • 0.75 cup shortening
  • 7 cups all-purpose flour, divided, or more as needed
  • 0.5 cup butter, melted

Dissolve Yeast and Mix Initial Dough

Pour 2 ½ cups warm water into the Thermomix bowl. Add 1 ½ tablespoons active dry yeast and ½ cup white sugar. Mix for 2 Min./37°C/Stufe 2 to dissolve the yeast. Add 1 tablespoons salt, ¾ cup shortening, and 3 cups all-purpose flour. Mix for 3 Min./Knetstufe until the mixture is the consistency of a thick pancake batter.

First Rise

Remove the Thermomix bowl. Cover it with plastic wrap and a towel. Place the bowl over a pot of hot (not boiling) water, making sure the bottom does not touch the water. Let rise until doubled in size, about 45 minutes to 1 hour. This step is done outside of the Thermomix.

Mix Remaining Dough

Place the bowl back on the Thermomix. Gradually mix in the remaining 4 cups all-purpose flour until the dough is smooth and elastic; you may need to add up to 1 additional cup. Mix for 3 Min./Knetstufe. If needed, add more flour gradually until the dough reaches the desired consistency.

Shape Rolls and Second Rise

Heavily grease two 9x13-inch glass pans with shortening. Divide the dough into 24 balls. Place 12 balls into each of the prepared pans. Cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans. This step is done outside of the Thermomix.

Bake Rolls

Preheat the oven to 375 degrees F (190 degrees C). Bake the rolls in the preheated oven until golden brown on top, 25 to 30 minutes. This step is done outside of the Thermomix.

Brush with Butter

2 min/122°F/Speed 1 50

Melt ½ cup butter in the Thermomix bowl for 2 Min./50°C/Stufe 1. Remove from the oven and brush the melted butter over the top of the baked rolls.
