Description

Danish Förtchen with jam are a festive cake recipe for the Thermomix®, ideal for breakfast or dessert. The main ingredients are eggs, buttermilk, wheat flour, baking powder and sugar. Preparation takes about 70 minutes, of which 40 minutes is active work, and yields 4 servings. This recipe is particularly suitable for the winter and Christmas season and is a nice family meal.

Ingredients (9 ingredients)

  • 3 Eggs
  • 400 ml Buttermilk
  • 250 g Wheat flour Type 405
  • 0.5 TL Baking powder
  • 1 EL Sugar
  • 0.25 TL Salt
  • Butter for the pan
  • Jam (as desired), for filling
  • Icing sugar

Preparation (7 steps)

Separate eggs

Separate the eggs and set the egg whites aside in a separate bowl. Place the egg yolks in the mixing bowl.

Prepare yolk mixture

Add the buttermilk, wheat flour type 405, baking powder, sugar and salt to the egg yolks in the mixing bowl and mix for 20 sec/speed 4.

Let the dough swell

Let the dough swell in the mixing bowl for about 20 minutes.

Beat egg whites until stiff

Whisk the egg whites in a separate bowl with a hand mixer until stiff.

Fold in beaten egg white

Carefully fold the stiff beaten egg white into the dough in the mixing bowl with a spatula.

Bake Förtchen

Heat an Ebelskiver pan or a cast-iron Förtchen pan and grease with butter. Fill the wells to 3/4 with dough. Bake on the stove over medium heat. Turn with a wooden skewer as soon as a crust has formed on the pan. Repeat until all Ebelskivers are baked.

Fill and serve Förtchen

If desired, fill the baked Förtchen with jam using a piping bag with a long, thin nozzle and serve sprinkled with icing sugar.
