Description

This fragrant rice with oranges and pointed cabbage is an absolute highlight in the cold season! The combination of sweet oranges, aromatic spices and crunchy pointed cabbage is simply irresistible. I especially like to make this dish when I want to cook something light but still filling. The rice becomes wonderfully juicy from the orange juice and the spices give it an oriental touch. Perfect as a vegetarian main course or as a side dish to meat or fish. It can also be prepared well in advance and tastes just as delicious when warmed up!

Ingredients (15 ingredients)

  • 1 piece small Onion
  • 2 tbsp Ghee
  • 2 piece Cardamom pods
  • 4 piece Cloves
  • 1 etwas Cinnamon
  • 100 g Cashew nuts
  • 3 tbsp Raisins
  • 400 g Whole grain rice
  • 4 piece Organic oranges
  • 4 piece Carrots
  • 1 tsp Cumin (ground)
  • 1 tsp Coriander seeds
  • 1 tsp Fennel seeds
  • 0.5 tsp Turmeric
  • 1 etwas Soy sauce

Preparation (10 steps)

Chop onion

Peel and quarter 1 small onion and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Add 2 tbsp ghee, 2 cardamom pods, 4 cloves and some cinnamon and sauté for 3 min./120°C/speed 1.

Sauté cashew nuts and raisins

Add 100 g cashew nuts and 3 tbsp raisins and sauté for 1 min./120°C/speed 1.

Add rice and liquid

Add 400 g whole grain rice and stir for 10 sec./speed 2. Wash one organic orange in hot water, grate the peel and set aside. Squeeze the juice from 3 organic oranges, fill up to 600 ml with water and add to the rice in the mixing bowl together with the orange zest and some salt.

While the rice is cooking, peel and slice 4 carrots. Wash the pointed cabbage and cut into strips.

About this recipe

This fragrant rice with oranges and pointed cabbage is a dish that has evolved with me over the years. Originally inspired by Indian cuisine, I have adapted it again and again until it has become what it is today: a warming, aromatic dish that is especially enjoyable in the cold season. The idea of using oranges in a rice dish came to me when I tasted a particularly aromatic variety and thought that the sweetness and acidity would go perfectly with savory spices. The ingredients all play an important role. The whole grain rice provides a filling base and provides valuable fiber. The cashews and raisins add a pleasant sweetness and texture to the dish - the cashews provide a nutty bite, while the raisins contribute a soft, slightly sticky consistency. The oranges are of course the star of the dish. The juice permeates the rice and makes it wonderfully juicy, while the grated zest gives it an intense orange flavor. The carrots add sweetness and color to the dish, while the pointed cabbage provides a slightly bitter note and a pleasant crunch. The spices - cardamom, cloves, cinnamon, cumin, coriander seeds, fennel seeds and turmeric - give the rice an oriental touch and warm you from the inside. When preparing in the Thermomix®, it is important not to chop the onion too finely, as it can burn otherwise. Sautéing the spices in ghee is crucial to release their full aroma. Make sure to wash the rice well before cooking to remove excess starch. The simmering basket prevents the rice from burning on the bottom of the mixing bowl. When sautéing the vegetables, the reverse direction is important so that the ingredients are not crushed. This dish can be varied wonderfully. For a vegan version, you can replace the ghee with vegetable oil. Instead of pointed cabbage, you can also use savoy cabbage or Brussels sprouts. If you like it spicier, you can add some chili. Other spices such as ginger or curry powder also go well with it. Serve the rice with oranges and pointed cabbage as a vegetarian main course or as a side dish to roasted chicken, fish or lamb. A dollop of yogurt or a fresh salad also go well with it. The rice can be prepared well in advance and tastes just as delicious when warmed up. Store it in the refrigerator and heat it in the microwave or in a pot before serving. The rice can also be frozen well.
