Description

These refried beans with chipotle and cheese are an explosion of flavour that will transport you directly to Mexico. I have been preparing this recipe for years and it is always a success at my family gatherings. The combination of mayocoba beans with chorizo and the smoky touch of chipotle is simply irresistible. The grated chihuahua cheese gives it a delicious creaminess. They are perfect for serving with corn tostadas or as an accompaniment to rich birotes. Go ahead and try them, you won't regret it! The preparation takes time, but the result is worth it. Ideal to share in a family meal or a party with friends.

Ingredients (5 ingredients)

  • 1 kilo Mayocoba bean
  • 0.5 kilo Grated chihuahua cheese
  • 0.25 piece Vegetable cooking oil
  • 0.5 kilo Pork chorizo
  • 1 piece Medium chipotle chilli

Preparation (5 steps)

Cooked and ground beans

30 sec/keine/Speed 8

Cook 1 kilo of mayocoba beans or of your preference in the usual way. Once cooked, drain and place the beans in the Thermomix bowl. Grind the beans for 30 seconds at speed 8. If a finer consistency is preferred, grind for an additional 30 seconds at speed 10.

Cooked chorizo

In a large frying pan, cook ½ kilo of pork chorizo over medium heat until it is well cooked and golden brown. Remove the chorizo from the pan and set aside.

Ground chipotle

Thermomix® Setting
10 sec/keine/Speed 10

Place 1 medium chipotle chilli in the Thermomix bowl and grind for 10 seconds at speed 10.

Pour ¼ of vegetable oil into the Thermomix bowl. Add the cooked chorizo and the ground chipotle chilli. Program 3 minutes, temperature 120°C, speed 1. Stir with the spatula to ensure that the flavours are well mixed.

Incorporate the beans and cheese

Add the ground beans to the Thermomix bowl. Program 5 minutes, temperature 100°C, speed 2. Add ½ kilo of grated chihuahua cheese and stir with the spatula to melt and incorporate well into the mixture.
