Ingredients (13 ingredients)

  • 1 bunch spring onions, chopped
  • 1 cup all-purpose flour
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup buttermilk
  • 2.5 tablespoons milk
  • 2 tablespoons melted butter
  • 1 piece egg
  • 1 cup shredded pepper Jack cheese
  • 6 slices deli chicken breast

Combine dry ingredients

Add 1 cup all-purpose flour, 2 tablespoons chopped sun-dried tomatoes, 1 tablespoon white sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt to the Thermomix bowl. Mix for 10 Sec./Stufe 4.

Combine wet ingredients

Add 1 cup buttermilk, 2 ½ tablespoons milk, 2 tablespoons melted butter, and 1 egg to the Thermomix bowl. Mix for 15 Sec./Stufe 3.

Combine wet and dry ingredients

Thermomix® Setting
10 sec/Speed 3

Add the dry ingredients from the bowl to the wet ingredients in the Thermomix bowl. Mix for 10 Sec./Stufe 3. Use the spatula to scrape down the sides of the bowl if needed.

Add spring onions and cheese

5 sec/Linkslauf Speed 2 Reverse

Add 1 bunch chopped spring onions and 1 cup shredded pepper Jack cheese to the Thermomix bowl. Mix for 5 Sec./Linkslauf Stufe 2.

Cook the pancakes

Heat a lightly oiled griddle over medium-high heat. Pour 1/2 cup of the batter onto the hot griddle. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and top with some pepper Jack cheese and 1 slice of deli chicken. Cook until browned on the bottom, 2 to 3 minutes. Flip again and cook until chicken is warmed through, about 30 seconds. Repeat with remaining batter.
