Description

This springtime salmon and vegetable gratin is a comforting dish full of flavors. I love to prepare it in the spring, when fresh peas and spinach are at their peak. The salmon, melting and tasty, goes perfectly with the sweetness of the vegetable puree. It's a complete dish, easy to make and pleasing to the whole family. The preparation is quite quick, about 30 minutes, and baking takes about 25 minutes. Feel free to add a pinch of nutmeg to the puree for an extra gourmet touch. A real delight!

  • 800 g Peas
  • 150 g Fresh spinach
  • 4 piece Potatoes
  • 50 cl Poultry stock
  • 4 pavé Salmon
  • 4 piece Shallots
  • Liquid cream
  • Butter
  • Salt
  • Pepper
  • Flat parsley

Preparing the puree

Incorporating the cream and parsley

Preparing the salmon

Chop the remaining two shallots 3 Sec./Level 5.

Pan-frying the salmon

In a pan, sauté the chopped shallots in a little butter. Crumble the salmon fillets, salt and pepper. Cook over low heat for 3 minutes.

Assembling and baking

Place the salmon in a gratin dish. Cover with puree. Sprinkle with cheese to taste. Bake at 180°C for 20 to 25 minutes.
